This lot is from La Piragua - a farm and mill where two generations of the Vargas family produce exceptional coffees. They grow a few distinct varietals at 1800masl and have perfected washed, natural, and anaerobic natural fermentation methods. They also offer processing to neighboring farms and the sorting and processing side of the operation is managed by the women in their community.
This is our first year purchasing from La Piragua and we sampled all of their processing options before selecting this lot! The Naturals were super clean and impressive, but we are drawn to the dynamic, fruit forward, fully washed lots as the most pure representation of terroir. This lot is 100% pink bourbon variety, fully washed and sun dried. In the cup we taste lots of malic acidity, like grapes and green apple, along with some sweet citrus, like pink lemonade.
