This lot is traceable to 35 small-holder farmers in Ortega, Tolima. They are a part of a cooperative called Cafe Agrario which was formed in 2014 and received organic certification in 2020. This lot is made up of Caturra and Typica varieties grown at 1830 masl. Throughout harvest cherries are picked every 20 days and premiums are paid at the mill for perfectly ripe cherries. The coffee is then pulped and tanked in water for a 24 hour ferment, then finally washed three times and dried on raised beds. We selected this coffee through our importer partners at Falcon and are excited ofr further partnerships with this co-op in the future.
We taste - tart red fruit like cherry and cranberry, lemon, starfruit, with a hazelnut cream finish.
